Vanishing Oatmeal cookies

1/2 c butter, (prefer smart balance light)1 c packed brown sugar2 egg whites1 tsp. pure vanilla extract3/4 c all-purpose, unbleached flour (or whole wheat pastry flour)1/2 tsp. Baking soda1/2 tsp salt1 tsp. ground cinnamon1 1/2 c dry thick oats1/2 c raisins
Preheat oven to 350 degrees
Beat together butter and brown sugar until smooth. Add in egg whites and vanilla, beat until well combined.
Mix together flour, baking soda, salt, and cinnamon. Add flour mix to wet ingredients. Stir in thick oats until well combined. Fold in raisins, or try dried cranberries.
Drop by teaspoon 2" apart on an un-greased cookie sheet and bake at 350 for 10-12 min, or until edges turn golden brown. Makes approx. 24 cookies.
Double all ingredients for regular batch, which yields 48 cookies
