Simple Seafood Curry

Ingredients
Cooking spraySmall onion, finely chopped250 g of seafoodLow fat curry paste (less than 4% fat content)0.25 cup of coconut flavoured evaporated milk
Directions
Spray a non-stick pan with cooking spray and saute onion until softened.
Add curry paste and stir until thoroughly mixed with the onion. Add a little water if the mixture gets too dry.
Add seafood and gently stir for a minute. Add coconut flavoured evaporated milk and simmer till seafood is cooked, about 2 - 3 minutes

    Very nice will make this again. So pleased some one else uses coconut flavoured ev\aporated milk. 98% fat free so all the taste without the calories. You must try this. - 8/12/09
