Gluten Free Chocolate Chocolate-Chip Muffins

2 eggs1 cup sugar1 cup 2% milk1 Tbsp baking powder1 cup vegetable oil1 tsp salt2.5 cups rice flour (or another gf flour blend).5 cup cocoa
Mix all the dry ingredients in a bowl. Make a well and pour wet ingredients into the well in the dry ingredients. Mix together. The batter will be slightly lumpy. Add in chocolate chips (or dried fruit or nuts). Place in paper-lined or greased muffin tins and bake at 400° for 15-20 minutes. Makes 2 dozen muffins. (serving size is 1 muffin)

Subbed 1 c. Brown rice flour, 1 c. quinoa flour, 1/4 c. Arrowroot, 1/4 c. Flax seed meal. by the way...amount of choc. Chips is not listed. Did the math and it looks like 1 cup is intended. Got 22 cupcakes, probably because I didn't line with paper. Filled 3/4 full each, were small. Dense, tasty! - 3/25/12
