Romaine LettuceRed Kidney BeansGarbanzo Beans (chickpeas)Fresh peas (or thawed frozen)Fresh sliced mushroomsLight Raspberry Walnut VinaigretteOptional:Grated Carrots (not pictured)Avocado (not pictured)Mango (not pictured)
Tear or chop up Romaine leaves, arrange on plate to heart's content. Pile on kidney beans, chickpeas, peas, mushrooms, and (if desired) mango chunks, avocado chunks, and grated carrots on the top. Lightly drizzle a tablespoon or two of Raspberry Vinaigrette over the top, and Voila! Grab a fork and enjoy your protein-filled sweet salad.
