Carrot sauce for Bow Tie Pasta

Ingredients
1 - 16 oz. pkg. frozen sliced carrots2 Cups chicken low fat broth (can use vegetable if vegetarian)2 Tbls. honey1/2 to 1 Tbls. dried basil1/3 Cup grated parmesan cheeseSalt & Pepper to tasteParsley for decoration
Directions
Add carrots, broth, honey & basil together in a 1 quart saucepan. Bring to a boil and cook until carrots are cooked through and softened. Take carrots out of the broth and put them in a food processor. Process until smooth (you may need to add a bit of broth to work the carrots). Add carrots back to the broth mixture, add 1/3 cup parmesan cheese as well as the salt and pepper to taste.

Serve over bow tie pasta or penne pasta with a sprinkling of parsley.

    This sauce is amazing; however, I omitted the honey, used fresh carrots, used 1/4 cup parmesan cheese, and added 2 tbls of fat free sour cream : ) - 7/19/12
