Perfect Matzah balls

2 eggs2 Tbs. oil2 tbs. water or chicken stock, warm.5 tsp. salt.5 tsp. dill.5 cup matza meal
Seperate egg whites and yolks. Beat egg whites until stiff. In seperate bowl mix oil, water, dill and egg yolks. Fold in egg whites and mix until consistant. Slowly add in matzah meal. Once mixed, refridgerate for 1/2 hr to an hour (depending on how much time you have!) Form into balls and put in boiling soup. Cook for at least 20 minutes, but I have always found the longer the better.
It usually makes between 16-20. Can easily be doubled or halved.
