Portobello Cheesesteak Sandwich

Ingredients
2 tsp olive oil1 medium onion, diced4 large portobello mushrooms, sliced into strips1 large red pepper, sliced into strips2 tsp dried oreganosalt and pepper1 tbsp flour1/4 cup vegetable broth1 tbsp soy sauce3 oz. thin sliced provolone cheese4 whole wheat buns
Directions
Saute onion in the olive oil on medium until softened. Add mushrooms, peppers and salt and pepper to taste. Saute until vegetables are tender, about 7 or 8 minutes. Reduce heat a bit and sprinkle in flour. Stir for a moment. Add broth and soy sauce. Bring to a simmer and simmer for a moment to cook out raw flour taste. Turn off burner and separate the mixture in the pan into 4 mounds. Place cheese over each and cover skillet for a moment until the cheese melts. Serve on a bun.
