Asparagus Soup with Lemon

3 lbs fresh asparagus, woody ends removed, and chopped into 1/2 inch pieces1 small onion, sliced1 Tbs olive oilzest and juice of 1 lemon salt and pepper
Fill a bowl with ice water, and a large saucepan with water. Bring the water to a boil, then cook all of the asparagus until bright green and slightly tender (about 2 minutes). Immediately plunge the asparagus into the ice water bath, stopping the cooking and preserving the color, then drain and set aside.
Empty saucepan, add olive oil and heat over medium heat. Add onion and cook until softened. Increase heat to high, add chicken stock and lemon zest. Bring to a boil and cook for about 10 minutes. Add asparagus pieces, and cook until tender, about 5 minutes.
Puree the soup in batches. Then add lemon juice and salt and pepper to taste.
Makes about 5 servings.
