Egg Muffin

Ingredients
4 eggs5 egg whites¼ cup parmesan cheese (shredded)½ cup low fat mozzarella cheese (shredded)¼ cup 1% milk½ cup deli ham (chopped)1 small onion (chopped)1 tbsp olive oilSaltPepper
Directions
Preheat oven to 350 degrees. Cook onions in olive oil until slightly browned. Add ham and cook until ham is warmed. Take off of heat. In a separate bowl, scramble eggs, egg whites and milk. Add parmesan cheese and mozzarella, mix and season with salt and pepper to taste. Add onions and ham. Pour mixture into muffin pan. Bake until centers are firm and top is slightly brown (approximately 15 minutes). Recipe makes 9-12 muffins depending on size. Recipe nutrition is calculated at 9 muffins.

Also good with broccoli, spinach or mushrooms added!
