Chicken & Apricot Stir Fry

Ingredients
2 cooked boneless, skinless chicken breasts(330 grams)1/2 cup dried apricots1/4 cup hot water2 teaspoons dried cilantro(optional)1 Tablespoon cornstarch1/2 teaspoon salt1/8 teaspoon pepper1 Tablespoon oil1 medium onion sliced and quartered2-3 stalks celery, sliced thin2-3 medium carrots cut thinly on the diagonal2 cups snap peas or snow peas1/2 teaspoon ground ginger1 clove garlic1-2 tablespoons lemon juicecooked rice
Directions
Pre cook 2 boneless, skinless chicken breasts in a sauce pan covered with water. Let cool. Chop into small bits and toss with cornstarch, salt, pepper and cilantro. Set aside.

Chop dried apricots and place in a small bowl. Cover with hot water and let sit for 15-20 minutes.

Heat oil in a non-stick skillet. Add chicken and stir frequently til starting to brown. Add onions, carrots and celery, toss and cook for several more minutes. Add ginger, garlic, peas and apricots with remaining liquid. Stir frequently til peas are cooked but still a bit crispy. Add lemon juice. Serve over rice. Serves 3
