Vegan ChickPEA salad

4 cups cooked or canned chickpeas (garbanzo beans)3 ribs celery, chopped1/3 of 1 red onion or about 3 green onions, chopped1/4cup fennel, optional, chopped3/4cup parsley, chopped1/3cup vegan mayo (vegenaise)1/3cup mustard
I cook my own beans but canned beans would work great too. It's a very forgiving recipe so all measurements are variable.
Pulse cooked (drained and rinsed if canned) chickpeas in a food processor or squish with a fork or potato masher until crumbly...not smooth.
Chop parsley, celery, fennel, and red onion finely. Mix in a bowl with vegan mayo (vegenaise is my favorite by far), mustard, and pickle relish.
Mix in crumbed garbanzo beans.
Yum!
Serve in pita, on top of salad greens with peppers. or whatever vegetables you enjoy. Eat this salad however you may like to eat the meaty version of chick*pea* salad.
