Corn Relish

Ingredients
3 med. sized ears of corn, or 2 cups frozen corn1/2 Cup finely chopped English Cucumber1/3 Cup lime Juice1/4 C thinly sliced green onions1 T. grated orange zest3 T. orange juice2 T. chopped fresh mint, or 1 T. dry mint1 t. cumin seeds1 or 2 fresh jalapeno peppers seeded and finely choppedsalt to taste
Directions
Add cleaned corn to boiling water and cook for 5min. Drain and cool. Remove corn from cob. Mix all ingredients, season with salt. Cover and refrigerate up to one day. Flavors are best after they have been sitting for about an hour. Server as desired.
