Cabbage & Sausage Soup

Ingredients
Louis Rich Turkey Smoked Sausage or Kielbasa (1 lb.)4 Cups Chopped Cabbage1.5 Cups Sliced Zucchini,5 cup chopped Green Pepper.5 cup chopped Yellow Pepper1 medium chopped onion2 cups of tomato juice1 can Stewed Tomatoes1 can of Campbell's Tomato Soup2 TBS Chili Powder.5 Tbs black pepper1 Celery stalk chopped.5 cup sliced fresh mushrooms.5 cup chicken broth
Directions
Cook onion, peppers and celery in broth until tender. Place all ingredients into a large crock pot and let it cook slowly for 3 or 4 hours. If the soup looks dry add more tomato juice or water.

    This is a really tasty and filling soup. I would recommend cutting the chili powder to 1 tbs if you don't want your soup to have too much of a kick. - 1/29/08

    I left out the peppers and reduced the chili peper to 1 T and this soup was excellent. It will be replacing my regular cabbage soup recipe. - 9/8/20

    I modified this recipe a bit. I used Italian sausage. I only used 1/2 the chili powder and did not use the zucchini or mushrooms. I did add paprika and garlic. Family loved it! - 6/24/12

    Great soup! And forgiving! I took liberties with the veggies...using a whole zucchini, a couple whole red and green peppers, and I tossed in the whole container of sliced fresh mushrooms. I also sauteed the onion and peppers in a little olive oil. Other than that, I followed the recipe. YUM! - 3/5/12

    This is delicious! Very hearty and filling. I made mine on the stove top (don't have a crockpot) and it turned out great! I did add alittle extra broth to make it "soupier" but other than that, I followed the recipe as written. Yum! - 2/6/12

    This soup was a hit at our house! My 8 year old asked for a second bowl and my picky 5 year old liked the broth and the sausage. I used venison sausage and added a quart of our homemade, canned tomato juice. Wasn't expecting it to be spicy. Maybe a Tbsp less of chili powder next time! - 7/21/09
