Mexican Squash Casserole

3 Calabacita (or zucchini) squash, sliced1 med. onion, sliced2 Roma Tomatoes, diced1 Jalapeno pepper, chopped fine (optional)3/4 c. Colby Jack Cheese, gratedSalt, Pepper & Garlic, to taste
Saute squash, onion, pepper & garlic in skillet sprayed with cooking spray. Add tomato. Salt & pepper to taste. Pour mixture into baking dish sprayed with cooking spray. Top with grated cheese. Bake at 350 degrees until cheese is melted.
