Lime-marinated Flank Steak

Ingredients
1/3 c Fresh lime juice2 tbsp soy sauce2 scallions, thinly sliced2 tbsp minced, peeled ginger1/2 tsp red pepper flakes (optional)Vegetable oil (for grilling)coarse salt and fresh ground pepper
Directions
Makes 4 servings

In a plastic bag, throw together lime juice, soy sauce, scallions, ginger and red pepper. Add flank steak, seal the bag and toss in the fridge for a half hour, turning occasionally.

Ether heat the grill on high, and grill until done - 6-8 minutes for medium rare.

Or, place on a broiler pan and broil for 5-6 minutes per side.

Allow to rest 10 minutes before serving. Slice thinly.
