Sour Cream Chicken Enchiladas

Ingredients
1 lb of chicken, cooked1/3 c onion, chopped4 tb butter1 can of green chiles6 oz neufchatel or lowfat cream cheese2 tb lime juice1/3 c fresh cilantro, chopped1/2 t cumin1/2 t cayenne3 cloves garlic or 3 T dried1/2 c shredded cheese, to top enchiladas8 tortillas, whole wheat or corn
Directions
Let butter and neufchatel soften. Mix together, and add in sour cream, lime juice, cumin, cayenne, cilantro garlic and onion. Reserve about a third to pour over the enchiladas, then add diced or shredded chicken. Spoon the mixture into tortillas (you may want to warm them a few seconds in the microwave if they crack) and place in baking pan, seam side down. Pour remainder of sauce over them and top with a little shredded cheese.

    this was good, a little thick, next time I make it I will add a liltle milk to thin it out. I didnt use the peper powder or the chilies but substituted tomatoes for the chilies ....it was very good and I will make it again

    Thanks! I forgot to mention that you bake it at 350 for 30 min once you put it together, and I can't figure out how to edit it. D'oh!
