Thai green curry

Ingredients
400 gram chicken thigh, boneless1 medium onion, sliced150gr baby eggplant100 gr fresh sweet cornThai peppercorns1 sachet Royal Thai cook-in sauce1 packet Uncle Ben's thai rice
Directions
Fry Chicken and onion in a wok, using a little olive oil
Add the chopped veg and pepper corns, toss gently
Add the cook-in sauce and simmer till done.
Cook the rice and serve on a bed of rice.
