L.R. banana nut muffins with flax and oat bran

Ingredients
1-1/2 cups whole wheat flour1 cup oat bran1/2 cup ground flax seed2/3 cup brown sugar2 tsp. cinnamon2 tsp. baking soda2 tsp. baking powder1 tsp. salt2 eggs, slightly beaten3-2/3 cup mashed bananas2 T. oil2 tsp. vanilla2/3 cup walnuts, lightly toasted
Directions
Preheat oven to 375. Spray 24 muffin cups with non-stick spray. In a large bowl, combine dry ingredients. In another bowl, whisk together wet ingredients. Stir wet into dry just until combined. Stir in nuts. Divide into pans. Bake for about 20 minutes or until done. Makes 24 muffins.

    More like a bread than a muffin-Mine weren't moist either, but for sheer health value and getting the protein in, they are ace. I reckon it also only makes around 18-otherwise they were really small and flat. - 9/28/09

    Spoon the flour into your cup to make sure you're not getting too much. You could also add more banana.
