Ingredients
12 oz. 93% lean ground beef1 C. Canned black beans1 C. Canned corn2 C. water1 C. Picante sauce2 C. Miinute Brown rice, uncooked1 C. Shredded mexican cheese blend1 C. Fat Free sour cream1 T. Chili powder
Directions
In large skillet, brown the ground beef. Stir in Beans, corn, water, chili powder and picante sauce. Bring to a boil, then stir in rice. turn heat down to low and cover until rice is cooked (about 5 minutes). Sprinkle with cheese, turn off heat and cover until cheese is melted (about 2 minutes). Makes 8 1 C. servings Garnich with generous dollop of sour cream.
