Ingredients
2 cups egg beaters2 cups fresh spinich chopped1/2 cup onion1/2 cup chopped red bell pepper1 cup chopped mushrooms1 cup broccoli florets chopped1 tbsp. olive oil1 tbsp smart balance light2 ounces light chedder cheese(I like cabot 50% light)
Directions
heat olive oil and smart balance over med. heat add all veggies cook until just tender about 5 min. add egg beaters and cheese.Cook until eggs are set and cheese is melted.
