I tried it with 1 green, 1 red and 1 yellow pepper. I used 2 cans of rotel instead of tomatos, a can of tomato soup instead of tomato sauce. Excellent! - 11/29/09

I tried this with no salt added tomatoes and brown rice instead of white. It was a little watery to begin with, but after cooling and reheating it thickened up nicely. Very tasty! I will definitely make it again. - 10/25/10

One of my favorite soups that I always buy when I see it. I was so happy to make it on my own and find that it was very easy and delicious!!! This soup is great this time of year when the peppers and tomatoes are at their peak. I used lean ground turkey and brown rice and the soup was awesome! - 9/16/09

Good job, great low-cal dish. Next time, I will try some of the ideas mentioned here...I think I'll cut down on onion, raise up spices...tonight I used a lot of hot sauce for some flavor.. - 8/14/07

I used ground turkey and 86'd the water/boullion to make it more like if I actually cooked stuffed peppers and chopped it all up together. Since I didn't have enough peppers to stuff for the family it worked out great, and I always keep frozen chopped peppers handy that I used. Thanks for the idea! - 7/5/07

Try this recipe with roasted green chili's. SO GOOD! Also I have left out the beef bouillon and put in italian seasoning, YUMMO! Even my hubby eats this, and he doesn't eat anything with onions. ENJOY! - 6/28/07

I forgot this was a crock rec., so cooked it on the stove top. Worked great! Very good, light take on a classic. Nice lunch soup. - 5/2/07

Very tasty! I used a can of Italian-spiced diced tomatoes and used beef broth instead of water and bouillon; I omitted the tomato sauce because I just plain ran out of room in my crock pot! Still very yummy, and easy as pie! Thanks! :) - 4/24/07
