Three-Cheese Alfredo Sauce

Ingredients
1/2 tbsp butter8 oz nonfat cream cheese (can use regular or light cream cheese instead)2 cloves garlic (or equivalent)1/4 tsp black pepper2 C nonfat milk6 oz mozzerella cheese (3/4 cup)2 tbsp parmesan cheese (or to your taste. Calories are for 2 tbsp)salt or garlic salt to season
Directions
-Melt butter in sauce pan on medium
-Add cream cheese and stir till melted and creamy
-add garlic and pepper
-Gradually pour in milk until well blended and creamy
-Stir in mozzarella until melted.
-Mix in parmesan
add salt as desired

It thickens as it cools. Thin with nonfat milk if needed.

Note: Because nonfat cheeses don't melt quite the same as high-fat cheeses, you may need to pop the sauce in a blender to smooth it out, or use a hand blender.

    Tasty! I also added mushrooms and cut it back to 2 servings: 2 ounces of nonfat cream cheese, 1 clove of garlic, 1/4 cup of 2% milk, 1 mozzarella cheese stick cut up in chunks, 1/8 cup of a 3 cheese blend (parmesan, romano and asiago). Perfect portion! - 9/6/13

    I used this to top pizza (Easy Yeast Free Pizza submitted by BRFIED). I used 1/2 the garlic and added 2/3C cooked spinach. I spread it on the crust and topped with a little more mozzarella cheese. It was yummy. Think next time I'll try adding some artichoke and using it w/tortilla chips! - 6/27/11

    My whole family loved the sauce, very rich and cheesy. I used blue menu fat free cream cheese and it melted just fine. I also used blue menu high fibre fettucine which complimented it great!!! a keeper for sure - 1/8/10

    I used low fat cream cheese I cut back on the mozzarella and added more shredded parmesan. With the addition of veggies, shrimp and fettuccini it made a good dinner. - 11/12/20
