1 c cottage cheese2 8oz pkg cream cheese3 eggs1 T coconut milk1 tsp vanilla1 T coconut crystals2 T xylitol1/4 tsp stevia or truvia1 T coconut oil1 T butter - brownedcombine above ingredts. in blender, set asideCrust1 c mixed nuts of choice - chopped2 T butter - browned2 T coconut oil1 T flax seed1 T psyllium husk1 T coconut crystals
Chop nuts in food processer. Brown butter (keep an eye on it) lower heat, add coconut oil. When melted mix, nuts, psyllium husk, flax seed, coconut crystals, coconut oil & browned butter. Press evenly w/bottom of glass in spring form pan. Bake crust @ 400 degrees 20 min. Cool in freezer from 10 min. Lower temp to 300 Degrees. Spoon cheese cake mixture on top of crust. Don't pour, it will break up your crust. Bake for 1hr 15 min. Leave in oven to cool. Put in refrigerator till cool. Cut into 16 slices.
