2 large eggs1 cup uncooked old-fashion oatmeal 1 cup all-purpose or whole wheat flour1.5 cups 1% milk2 Tbsp packed brown sugar2 Tbsp canola oil2 Tbsp unsweetened applesauce6 tsp baking powder1/2 tsp salt
place oatmeal into a blender and pulse until it has the consistency of flour. In a bowl beat eggs until fluffy. Beat in remaining ingredients just until smooth.
Heat griddle or skillet over medium heat or to 375 degrees. If necessary spray with a non-stick spray. Pour slightly less than 1/4 cup of batter onto griddle. Cook until pancakes have puffed and are dry around the edges. Flip and cook other side until golden brown.
Makes 18 4 inch pancakes.
