Quinoa Pilaf

Ingredients
1 cup quinoa, washed, 2 cups fat free chicken broth, olive oil, garlic, pine nuts, 2 Tablespoons, dried apricots, raisins, currants or other dried fruit, cilantro and lemon to garnish.
Directions
Put olive oil in large sautee pan, turn heat to medium. Put in 1 clove garlic, minced and choped pine nuts and sautee until the garlic begins to change color. Add in quinoa and sautee for a minute or two. Add in Chicken broth, bring to a boil, reduce heat and simmer for 12 minutes until the liquid is mostly absorbed. Add in dried fruit and cilantro and cook for remaining for 3 minutes, till fruit is replumped. Serve warm or room temp with lemon wedge.
