Crunchy Oriental Chicken Salad

2 TBSP butter or stick margarine1 package (3oz) Oriental-flavor ramen noodles soup mix2 TBSP sesame seed1/4 cup sugar1/4 cup white vinegar1 TBSP seasame oil1/2 tsp pepper2 cups cut-up boneless skinless chicken breast1/4 cup dry-roasted peanuts [optional]4 medium scallions, chopped1 bag (16oz) coleslaw mix1 can (11oz) mandarin orange segments, drained
-Melt butter in 10-inch skillet over medium heat. Stir in seasoning packet from soup mix. Break block of noodles into bite-size pieces over skillet and stir into butter mixture.
-Cook 2 minutes, stirring occassionally. Stir in seasame seed. Cook about 2 minutes longer, stirring occasionally, until noodles are golden brown. Remove from heat.
-Mix sugar, vinegar, oil, and pepper in large bowl. Add noddle mixture and remaining ingredients. Toss.
