Tomato and onion pie

Ingredients
120g wholemeal flour100g white flourpinch of salt40g butter3 tbs water2 medium onions, chopped3 medium ripe tomatoes, sliced2 eggs200g cottage cheese, 1% fatThyme, fresh or driedSalt and pepper1 ball of mozzarella cheese
Directions
Mix flours and salt.
Cut butter in smaller pieces and mix with the flour until absorbed - mix it well! Gather the crust dough with the water and line a (buttered or otherwise treated) round pie form. Pierce with a fork and bake at 200 degrees C for 15 mins.

Fry the chopped onion on a nonstick pan till tender.

In a separate bowl, mix the egg, cottage cheese, thyme, salt and pepper.

Slice the tomato.

Remove the crust from the oven and place the sliced tomato into the crust, add tender onions and then the egg mixture. Top with sliced mozzarella.

Bake in the oven for 30mins at 200 degrees C.

Serve with a green salad.
