Chocolate Chip Cookies by Vegan Planet

Ingredients
2 c. unbleached all-purpose flour1/2 t. baking soda1/2 t. salt1 c. firmly packed light brown sugar1/4 c. pure maple syrup1/2 c. corn oilegg replacer for 2 eggs1 t. pure vanilla extract1 1/2 c. semisweet vegan chocolate chips1/2 c. chopped nuts (optional)
Directions
Preheat oven to 350.
In a medium bowl combine flour, baking soda and salt.
In a large bowl, combine egg replacer, brown sugar, maple syrup, corn oil and vanilla. Mix.
Add half the dry ingredients and mix until just combined. Add the other half and mix. Fold in chips and nuts.
Drop dough by spoonfuls onto baking sheets. Bake until golden brown, 15-18 minutes. Let cool.

The recipe says it makes 36 but I always get about 27.. but maybe I eat too much dough while I'm making them, ahh the greatness of vegan baking!
