Reduced Fat Cheese Enchiladas

1 pkg. (8 oz.) Fat Free Cream Cheese 1 pkg. (7 oz.) Shredded Non-Fat Cheddar 2 green onions, sliced 6 low-carb tortillas (6 inch) 1 cup salsa
HEAT oven to 350°F.
BEAT cream cheese in small bowl with mixer until creamy. Add 1 cup Cheddar and onions; mix well. Spread down centers of tortillas; roll up.
PLACE, seam-sides down, in 11x7-inch baking dish; top with salsa. Cover.
BAKE 20 to 25 min. or until heated through. Sprinkle with remaining Cheddar.

I add green chilies or green enchilada sauce to the cream cheese mixture. I dont use the salsa. I also perfer corn tortillas-ads more flavor. Throw in refried beans of blackbeans and corn. Yummy. I use sharp cheddar reduced fat cheese instead of fat free, and I just use less of it. - 12/9/10

Pretty good. Big hit with my hubby. I added deer meat for more filling texture and some of the seasonings added below instead of taco seasoning. Next time I will try it with chicken. He likes it with some taco sauce on top after it bakes. If you spray the pan before it makes the bottoms crispy! - 12/6/10

This sounds pretty good. Instead of the fat free cheese though I'm going to use real cheese. Just don't like anything that really isn't what it says it is. Anything thats fat free is man made but that's just my hang up. sure, the enchiladas will be a little more caloric BUT I bet they'll be good. - 6/11/09
