Fresh & Delicious Guacamole

Ingredients
2-3 Haas avocados (still a little firm for chunkier guac)1 medium vine-ripe tomato (or 2 lg romas)2 med-thick slices onion (red is best but non-sweet yellow works)1 large clove garlic, minced1 cup chopped Fresh cilantro leaves1 jalapeno pepper (seeds control heat), diced2 small limes juiced (1 Tbsp)salt & pepper to taste
Directions
In a med-large bowl, remove skin and seed from avocados (save seeds), and coarsely mash with large fork or potato masher. Cut tomatoes and remove seeds, then dice; toss into the bowl. Chopped the slices of onion and toss into the bowl, don't stir yet! Add in the minced garlic, cilantro, juice from 2 small limes, salt, & pepper. Cut the jalapeno length wise and cut out seeds and stem. For a spicier guac keep some seeds (not the white part, just seeds). Dice the jalapeno and toss into the bowl. Now, fold in all the ingredients until well combined, taste to see if more salt, pepper, or lime juice is needed and add if needed. Your done, enjoy this on sandwiches, BBQ'd poultry, steak or pork, with any Mexican dish, cut vegies, or simply tortilla chips!
