Orzo Pasta Salad

Ingredients
Dressing: 2T lemon juice, 1T olive oil, 1 tsp red wine vinegar, 1/2 tsp salt, 1/4 tsp pepper, 3 garlic cloves crushed1 cup uncooked orzo, 2 cups corn, 2 cups chopped tomato, 1/2 cup red onion (optional), 1/4 cup chopped basil
Directions
Makes 12 servings. Cook orzo according to package directions. Add corn, tomato, onion, basil and mix. Whisk together dressing ingredients then pour over salad and combine. Refrigerate 4 hours prior to serving.
** You may want to double the dressing!
