Low carb peanut brittle

1 cup Splenda granulated no calorie sweetener1 cup Splenda Brown sugar sweetener1 stick butter1/2 cup water1/2 teaspoon vanilla extract1/2 teaspoon baking soda1-2 cups peanuts
In pot cook Splenda, brown sugar, water and butter. Cook until it reaches hard crack stage on a candy thermometer. Remove from stove. Mix in vanilla and baking soda. Then mix in peanuts. Turn out onto a buttered cookie sheet and let cool completely. Then break into 40-50 pieces.

This recipe is incredible! Didn't think it was possible to make a sugar-less brittle!! I have a wicked nut allergy so peanuts (any nut) is out with the weird exception of walnuts & coconut. I put these in the brittle recipe and was in HEAVEN!! Thank you for sharing this recipe!

I wondered about the use of an entire stick of butter that is entirely too much butter. It swims in butter. Not having the peanuts in the caramel meant most were not coated and it is mostly peanuts in butter with a little caramel thrown in. Paper towels may help to soak it up. - 1/18/15

This is really good. I didn't have a candy thermometer and ended up with a taffy like product, which is still good. I researched Splenda Brown, and the calorie/carb/sugar counts are almost the same as brown sugar (1 cup = 800 calories vs 836 for sugar), so I will use brown sugar in future. - 2/10/13
