Turkey Sausage Gravy

1/2 small onion1/2 tsp dried marjoram1/2 tsp ground sage1 tsp ground black pepper1/4 tsp red pepper (or 1/2 tsp red pepper flakes)1 Tbsp olive oil3 Tbsp Whole Wheat Graham Flour2 Cups skim milk1 lb chub of Ground Turkey SausageNon-Stick Cooking Spray
1. Coat a skillet in non-stick cooking spray and saute the onions until soft and beginning to caramelize.
2. Add the ground turkey sausage and the seasonings. Brown well, making sure to break up the sausage into small bits.
3. Remove the sausage but leave any fat drippings (should be about 1 Tablespoon).
4. Add 1 Tbsp of olive oil then whisk in the flour 1 Tbsp at a time. Whisk the flour over medium heat until it turns brown before adding the next Tablespoon.
5. Once all flour has been incorporated add the skim milk. Continue to whisk to desired thickness.
6. Fold the cooked sausage back in.
