Easy Chicken Cacciatore

Ingredients
4 chicken leg quarters, skin removed and separted at the joint into thighs and drumsticks.28 oz can stewed tomatoes2 Tlb grated parmesan cheese2 c cooked whole wheat pasta
Directions
Remove the skin from 4 chicken leg quarter and cut through the joint to separate them into thighs and drumsticks.
Spray a large skillet with nostick spray and brown chicken pieces on both sides.
Pour stewed tomatoes over chicken, cover and simmer for 20 minutes.
Remove cover, turn chicken over, and simmer uncovered for 15 minutes more, while pasta cooks.
Divide pasta onto 4 plates, add drumstick and thigh to each plate, top pasta with sauce in pan and sprinkle w/grated parmesan.

    I made this but added 1 onion cut in pieces and changed noodles to brown rice. Also omitted the cheese and just used thighs. A keeper - 9/14/07
