Asian Pork with Noodles

2 tsp Sesame Oil3 minced cloves of Garlic1 tbsp minced Ginger Root8 oz Pork Tenderloin - you will grind this1 cup Campbell's low sodium chicken broth1-1/2 tsp Cornstarch5 tbsp Lite Soy Sauce1 tbsp Hoisin Sauce1 Hot Chili Pepper - minced (or 1 tsp chili paste)2 cups Bok Choy, raw-shreaded3 green onions, chopped1/2 cup freshly chopped cilantro200 grams Rice Noodles - cooked according to package directions*Sesame Seeds, 2 tbsp (remove)
Cut pork tenderloin into chunks after removing silver skin. Place in food processor and grind. Feel free to use lean ground pork rather than grinding the pork tenderloin. I find that this is a leaner version though.
In a wok or large skillet, heat the oil over medium heat
Add garlic and ginger and cook until gragrant
Add pork and continue to cook, breaking up the meat with a spoon until no longer pink.
Add the chicken broth
Combine the cornstarch in a cmall cup with the soy sauce, hoisin and chili
Add to the pork mixture, and continue to cook, stiring constantly until slightly thickened.
Add the bok choy and green onions and cook another 3 minutes.- turn heat to low.
Prepare noodles according to directions
Drain and place noodles in a shallow pasta bowl. Add pork mixture over top
Garnish with cilantro and toasted sesame seeds
