Sugar Free Banana Raisin Muffins

Ingredients
1/2 c. Splenda (measures cup for cup)1 tsp. Baking Soda1/4 tsp. Salt1.5 c. Whole Wheat Flour1/2 tsp. Cinnamon1/4 c. Canola Oil1/4 c. Skim Milk2 Bananas (med) mashed1 tsp. Vanilla extract1/3 c. Raisins
Directions
1. Preheat oven to 375.
2. Measure Splenda, baking soda, salt, cinnamon and flour into a bowl and stir.
3. Add oil, milk, bananas and vanilla. Stir until moist.
4. Stir in raisins and pour into a sprayed 6 well muffin pan.
5. Bake 18-20 minutes or until golden brown.

    I made a double batch, and using a regular muffin pan had enough for more than a dozen muffins. not sure how many it will make! - 1/31/08
