Crispy fried chicken nuggets

1 lb boneless skinless chicken breast, cut into nugget pieces (about 3/4 in)1-1/2 to 2 cups corn flakes1/2 tsp garlic powder1/2 tsp sea salt1/4 tsp ground pepper(recipe accounts for corn oil absorption at a rate of 1 tsp per serving)
Cut chicken breast into 3/4 in pieces.
Crush corn flakes into crumbs, and place in bowl or flat pan.
Heat enough corn oil for frying in medium skillet over medium high heat.
Sprinkle chicken with garlic powder, sea salt, and pepper. Then massage firmly, making sure the seasonings are evenly distributed.
Place 4 to 5 chicken pieces in corn flakes crumbs, and evenly coat.
When oil is hot enough, lower heat to medium, and cook chicken for 2 to 3 minutes per side.
Remove to paper towel, and allow to drain and cool for at least 3 minutes.
Makes four 4 oz servings.
Also try with Italian seasoning, and oven-baked for 15 minutes at 400 degrees.
