Ingredients
2 sweet potatoes, peeled, cooked1/4 tsp cinnamon sugar1/4 tsp brown sugar1/2 tbsp maple syrup1 tbsp butter3/4 boiling water
Directions
Peel and cube sweet potatoes. Boil cubed potatoes until soft and ready to be mashed. Before draining the potatoes save 3/4 cup of the water to add while mashing. Mash with a hand masher and add water as needed so a somewhat thick consistancy is reached (they should not be soupy). Add butter and other ingredients after mashing. Serve.

    I cut the recipe in half, using only one potato for two servings. After baking the potato for an hour at 375F, I peeled off the skin, eliminated the maple syrup and sugar, and reduced the water to a tablespoon before mashing the mix and reheating it briefly in the microwave.
