Grilled Chicken Sandwiches

Ingredients
1 half large chicken breast1/2 tbsp of olive oil1/2 tbsp of balsamic vinegar1 minced or crushed clove of garlic1/2 tsp salt1/4 tsp of the following: black pepper, paprika, parsley, basil1 large slice of onionleaves of favorite lettuce1 tbsp low-fat mayo2 slices of favourite bread
Directions
Combine 1/2 tbsp of olive oil with balsamic vinegar and all spices and place into ziploc bag
Slice large, boneless, skinless, breast lengthwise down the center
Poke holes in breast, place in ziploc bag
Shake bag to distribute marinade, leave in fridge for at least 15-20 minutes
Use cooking spray to coat botton of grill pan, heat to medium-high, and to coat on one side of sandwich bread.
Add marinaded breasts and onion slices to grill pan. Flip after 5-6 minutes.
Remove and stand for 3-4 minutes, toast bread in still-hot pan while you are waiting.
Spread hummus (or low fat mayo if you wish) on toasted bread, add lettuce, tomatoes.
place chicken breast on top, top with onions, cheese, and additional slice of bread.
Enjoy!
