Mexican Rice

Ingredients
1/2 medium tomato, diced1/4 cup onions, chopped2 tbsps salt1/4 cup tomato sauce (in 8 oz can)4 tbsps vegetable oil1 cup enriched, long grain rice2 cups water
Directions
heat oil
brown rice
add in tomato & onions, cooking through
add tomato sauce, cook for about 2 minutes, stirring often
add water & salt
bring to a boil
reduce heat to low & cover.
cook 15 - 20 minutes, when rice is done

    Was pretty good. A little too much tomato flavoring. Instead of tomato sauce, tomatoes and onions we normally use 3/4 of a can of Rotel and some ketchup. - 5/19/09
