Vegetarian Butter Chicken

2T extra-virgin olive oil1 onion, thinly sliced2 cloves garlic, minced1/2 tsp tumeric1 tsp paprika1-2 tsp chili powder1 Tbsp ground fresh coriander2 cups chopped veggies (carrots, cauliflower, celery)1 tin chick peas, drained1/4 cup almond butter1 to 1 1/2 cups broth or stock1/4 cup coconut milk (light) 1/4 cup almond milk
Lightly brown onion in olive oil, add garlic, tumeric, paprika, chili powder and coriander and mix well. Add veggies and cook on medium for about 5 mins, stirring frequently. Mix almond butter with 1 cup of broth and stir until mixed well. Add to pan and cook 8 mins longer, stirring frequently. Add more broth as needed to have lots of sauce. Add coconut milk and almond milk and cook 2 to 3 mins longer. Serve with rice or quinoa.
