Chicken Rossini

4 chicken breasts, no skin100 grams Smoked ham, thinklu sliced, or 8 thin slices Canadian bacon1 medium tomato, thinly sliced8 large fresh mushrooms, thinly sliced2 TBLSP Parmesan cheese125 grams fresh mozarella, thinly sliced, or about .5 cup, shreddded1 can low sodium chicken brothgarlic powder and pepper to taste
Makes 4 servings, add info for pasta if you serve with pasta.
Preheat oven to 350.
Season breasts with pepper and garlic powder.
Sear chicken in pammed pan and remove to baking pan.
Sauté sliced mushrooms til half done, pour in stock, cook 3 minutes more.
Add a layer of thinly sliced tomato to breast, followed by smoked ham or canadian bacon, followed by cooked mushrooms, pour in stock, cover with foil.
Bake 20-30ish minutes until chicken is cooked.
Add cheeses to breast, leave foil off and broil until cheese is melted.
Serve with green veggies for a very light meal, or with wwheat pasta for a more consistant meal, but add pasta calories.
