Plantain Almond Toast (modified)

Ingredients
4 sweet plantains or bananas 4 egg whites2 tsp cinnamon8 slices bread
Directions
Cook plantains to soften them to mash (or use ripe bananas). Mash plantains in large bowl until smooth then add egg, & cinnamon. Beat until smooth.
Dip bread into mixture, saturating each side.
Over medium-high heat, spray non-stick cook spray into large skillet.
Cook 4 coated bread until golden brown on each side.
Serve immediately.
