Very Cherry Salad

Ingredients
2 T olive oil4 t white wine or cider vinegar1 T minced shallot1 t prepared horseradish1 t sugar1/8 t salt1/8 t pepper2 c pitted, fresh sweet cherries (cut in halves)4 c mixed greens3 T slivered almonds1/4 c fresh basil leaves
Directions
1. For dressing, combine oil, vinegar, shallot, horseradish, sugar, salt, and pepper. Set aside.


2. In a large salad bowl, combine the greens and 1 3/4 c cherries. Toss with salad dressing. Sprinkle salad with almonds, basil, and reserved 1/4 c cherries.

    Pretty tasty - Good for some special occasion perhaps but I think it's a real travisty to ruin good fruit by pickling it with salad dressing - 6/29/10
