5 lg red potatoes cut in chunks1 1/2 cups bite size cauliflower florets1/3 cup light sour cream3 oz softened light cream cheese1 1/2c shredded low fat cheddar
Directions
place potatoes and cauliflower in lg saucepan and cover with water-bring to boil-reduce heat to med and cook 20 mins or until tender-drain-return to pan-add sour cream and cream cheese-mash until light and fluffy-stir in cheese..
