Ingredients
Directions
1. I use three of the six units of CostCo Skinless Breast Chicken (About 3.5 lbs)2. 2 Cups of Lemon juice3. 2 Cups of Water4. about 1/4 cup Montreal Chicken Seasoning
1.Thawing half of the large packages of boneless-skinless chicken breasts from COSTCO, trim any remaining fat, cut the thinner tail of the breast and put in the crock pot. Slice the thicker portion of the chicken breast longitudinally, thinning it for faster cooking and place in the crockpot.
2. Pour in lemon juice, water and Montreal poultry seasoning and Stir to mix all the ingredients.
3.Set Crockpot on low.
My crockpot cooks it in about 2.5 to 3 hours.
4.Set up your Tupperware, cutting board, scale, and ladle.
I measure out 100 grams of chicken and place it in the Tupperware with a ladle (half a cup) of broth drawn from the same crockpot.
What's not put in the freezer for my week's lunches is quickly consumed by my teenagers there on the spot:-)
