Turkey and Veggie Frittata

2 tbsp olive oil1 small onion, diced1/4 roasted red pepper, diced4oz can mushrooms1clove garlic, minced6 slices deli turkey (thinly sliced, diced)6 eggs, beaten6tbsp water4 oz mozzerella cheese
Heat olive oil in oven resisten skillet. Saute onions, pepper, mushrooms until soft. Add garlic cook 30 seconds longer. Add turkey to mixture and brown. Next add egg/water mix evenly over mixture and cook over low heat. Do not stir, if necessary pick up outer edges and allow egg to flow underneath. When eggs are set, sprinkle cheese over top. Place under broiler until cheese melts and is lightly browned. Cut into 6 or 8 pieces. (like pizza) Serves 6-8 or 3-4 hungry people. (Nutrition is for 6 servings)
