Spicy Sauteed Chicken Tenders

Ingredients
2 lbs Boneless Chicken Breast -No Skin1.5 tbsp olive oil4 tsp fresh chopped garlic (slightly pureed is good too)1 tsp Tabasco Sauce1.5 tsp black pepper.5 tsp kosher salt1 tbsp yellow mustard2 tbsp lite soy sauce2 tsp worcestershire sauce1.5 tbsp parsley (fresh or dried)
Directions
Serves 6 -It is pretty spicy, so cut back on the pepper or tabasco if you just want a little kick.

You will need an electric skillet or a large stove top skillet preferrably non-stick. It must be big enough so that the meat isn't crowded.

Cut chicken breasts into "tender" size pieces.

Heat skillet to 300 degrees with olive oil & garlic. Once garlic starts to brown, add chicken. Sautee for 3-5 minutes until chicken begins to cook. Add
kosher salt, pepper, worcestershire sauce & soy sauce. Sautee 5 more minutes. Add mustard & tabasco sauce (for a really good kick use one that 's even hotter to your taste). Continue to stir chicken every few minutes until you only have one minute left to cook (this could take 10-20 minutes depending on the size of your pieces). Add parsley and stir through for up to one more minute. (I like my chicken a bit "crunchy" so I cook it until well browned before adding parsley.) Remove from heat. Serve. (Goes great with oven baked fries and snap peas)

    I thought this was easy and pretty good. Too salty so next time I will omit kosher salt. Low sodium soy sauce is plenty of salt. Also I think serving with brown rice would be good - 8/21/08
