Low Fat Carrot and Raisin Salad

5 large carrots coarsely shredded (about 4 cups)1/4 c raisins1/4 c plain non-fat yogurt1 Tbsp light mayonnaise2 Tbsp. cider vinegarsalt and pepper to taste
shred carrots. Add raisins. Combine yogurt, mayonnaise, vinegar, salt and pepper, pour over carrots and raisins and combine. Serve as a side with turkey burgers or turkey hot dogs for a nice light summer meal. Refrigerate left overs and store in tightly sealed container.
