Cream Spinach

Ingredients
I usually use a large can of spinach. You can use a small can. (I have a big family)Drain it well1 small onion, chopped fine2 tbsp butterhalf of a cup of reduced fat sour cream
Directions
In a medium size, sauce pan. Saute your onions with the 2 tbsp of butter. Saute until almost tender. (I like my onions to have a slight, crunch)
Then add the drained, spinach and mix well.
Finally add the sour cream and heat through.
That's it. Very simple and oh so good.

    I accidentally bought a bag of kale instead of spinach. I was a little skeptical at first. I substituted kale for spinach & fat free Greek yogurt for sour cream. I also added pepper, salt, and garlic powder to taste. It was very good! I will definitely be making this again. Thanks! - 1/1/13
